As a Registered Dietitian — and a busy mom — I’m always looking for meals that are realistic, nourishing, and easy to throw together after a long day.

Salmon is by far one of my favorite sources of protein because it’s rich in omega-3 fatty acids, satisfying, and incredibly versatile. Lately, I’ve been obsessed with this simple one-pan salmon pasta dish that feels elevated but takes very little effort to make.

The best part? Most of the cooking happens in the oven while your pasta boils. Minimal prep, minimal cleanup, and packed with flavor.

Ingredients

  • Salmon fillets
  • Spinach
  • Cherry tomatoes
  • Feta cheese
  • Pesto
  • Garlic
  • Olive oil
  • Paprika
  • Black pepper
  • Pasta of choice
  • Optional: arugula for serving

How to Make It

Preheat your oven to 400°F.

In a large oven-safe baking dish or pan, add the salmon, spinach, cherry tomatoes, feta, and pesto. Top with garlic, black pepper, paprika, and a drizzle of olive oil.

Bake for 15–20 minutes, or until the salmon is fully cooked and flakes easily with a fork. While everything cooks, boil your pasta according to package instructions.

Once the salmon and vegetables are done, combine everything together with the cooked pasta and gently mix until evenly coated. I love serving it with extra arugula on the side for added greens and freshness.

This is one of those meals that looks impressive, tastes comforting, and comes together quickly — exactly the kind of recipe I rely on during busy weeks.
